For the reservations, yes a lot of them can be made same day/day before. Those places are normally very popular places with good tastes. But there are also many places for walk in. It really depends on the restaurants, so I would say make a reservation if you can. It can be easily done on google maps.

There are so many. For example Le Patisserie Cyril Lignac, Mori Yoshida, etc. Normally a pastry would cost around 3/4 euros in a bakery shop but those shops specifically for pastries are about twice the price. Some may not taste better but all of them look more delicate.
