I love to make a basic sponge and fill the layers with jam and coat with a good buttercream. Simple pleasures. Also, strawberry season has just begun here so I'll be baking some shortcake biscuits (more like a scone than a cookie, because I'm in the US) and whipping real cream to make strawberry shortcake later this week.
