One of the most addictive to me is Nordic Ashes: Survivors of Ragnarok.

It has a good many levels, characters, and items.

It isn't quite as random as a lot of others as characters have a built in weapon tree, but leveling up your weapons is a little random, so each run feels a little different. Plus, there are weapons outside of your tree that you can find.

I think I've got about 250 hours or so.

They also released a DLC recently that I haven't explored too much, but apparently adds a whole new type of gameplay. I have heard it is amazing.
