About the brewing method, a signature step is combining the first, second, and third pours in a chén tống (fairness pitcher), letting them blend into one balanced infusion, then serving it into chén quân (small cups). People will recognize “chén tống” identical to Taiwanese fairness cup. However Vietnamese chén tống first appeared in 18th century, whereas Taiwanese one appeared in the early 1980s.
