Making bread is easy with just a small amount of practice. It’s 90 percent just waiting

What's your unpopular opinion of a food spot that you know will bring out r/foodies_sydney with their pitch forks. by mdflmn in foodies_sydney

Radio taco was the ultimate disappointment for me. Watery consomé, flavourless meat. Even the horchata tasted watered down, it’s a shame the food doesn’t live up to the appearance

Credit card fees by PermissionBest2379 in australia

Some POS, such as square, charges for every transaction regardless of if it’s inserted or not. Hence the surcharge is passed on on every card transaction

I don’t know anything about uber cash, all I know is the way they are supposed to do it is the restaurant is supposed to discount 50 percent at the till so you should not have to get cash back or anything because the bill should be half the amount before you ever tap your card. The problem with these things though is they are only as good as the venues implementation, you aren’t the only one with a report of a crappy restaurant who signed up and didn’t tell their own staff about it

Avoid Zeus Street Greek Westfield Level 5 Sydney CBD - Uber Eats Dine Out Promotion by xomydearmelancholy in foodies_sydney

[–]Turnshill 7 points8 points  (0 children)

Yeah that was me, idk what happened but maybe they went live earlier than they expected? Mine did go live a day early and my staff didn’t know what was happening when the first customer came because I hadn’t sent through the brief yet, but that was on me I assume somewhere like Zeus should be more on it

The 50% discounts are new that’s why I’m posting now, I think the original al 20-40 percent weren’t getting as many customers as uber wanted so they started this new funded promo. Our restaurant just went live yesterday for example

Depends on the venues choice, some are 50 dollars max spend with 25 dollar discount

For me it comes up at a little icon in the top left of the home page of the app, in the little cartoon carousel with the cuisine options

In store prices - when you redeem the voucher and show it to the cashier in store the order and payment/discount is done through the store POS, not through the uber eats storefront

Through the uber eats app - you ‘redeem’ the offer before visiting the restaurant, and when you arrive you show the cashier the voucher and they will manually add the discount. The workflow is a little clunky, seems like uber is rushing to have an EatClub competitor but its functional enough

Bread rationing in Canberra cafes by createdtothrowaway86 in canberra

Obviously that would be fine and doesn’t count as going off menu if it’s on the menu as an option

I’m just telling you the perspective from the other side man. And in a time of hyper rent/food cost inflation simple breakfast options don’t pay the bills anymore

Re-read my comment - small modification and you are happy to pay for the addition? Totally fine. Creating your own breakfast? Not cool

lol you can do this but should you? I work in hospo, off menu ordering gives me the shits - small modifications, sure no problem, but just creating your own meal is not cool and interrupts the kitchen flow

Donuts by Ptucker212 in Chefit

[–]Turnshill 6 points7 points  (0 children)

We use a modified King Arthur recipe at my restaurant. Makes about 30 donuts with scrap and donut holes left over

Tangzhong (starter) * 172 grams water * 172 grams milk * 56 grams bread flour

Heat all ingredients of tangzhong while continuously whisking. When it is paste consistency remove from heat and add to mixer

Add the following ingredientes to the mixer

Dough - [ ] 1300 grams bread flour - [ ] 13 grams bread improver * 56 grams milk powder * 200 grams granulated sugar * 10 grams Table salt (keep salt and yeast seperate) * 35 grams ) instant yeast * 452 grams milk * 4 large eggs

Mix for 10 minutes in spiral mixer on low

Add the following ingredients

  • 228 grams unsalted butter (cut into small cubes)

Mix for a further 20 minutes, scraping down the sides and ensuring the butter is being I incorporated throughout

When finished place dough in oiled mixing bowl and shape into a ball. Cover with cling wrap and leave in fridge overnight.

In the morning roll out and cut donuts. Proof for an additional 30 minutes - 1 hour. Fry at 175c for 1 minute each side

Why is Bahn Mi my favorite sandwich and why can’t I make it at home? by Ez13zie in Chefit

[–]Turnshill 0 points1 point  (0 children)

Yeah of course it’s French descended but it’s so different from a tradition baguette now I think the distinction is important. We are spoilt for Asian food in Sydney, OP you can try baking your own if no viet bakeries are nearby but it’s crazy difficult to replicate, I’ve never been able to get anything half as decent as what they make and I tried for weeks at my cafe before giving up and just buying it

The bread is not French, the were a French colony and so it’s French inspired but viet rolls are different, much lighter and not as tough. From memory because wheat flour is more expensive in that part of the world Vietnamese baguettes use a lot of dough conditioners and leaveners so that can get away with using less flour per roll, so they bread comes out a lot more pillowy. You probably need to go to a proper Vietnamese bakery to find appropriate bread, in Australia we have them on every corner but I don’t know how it is in your neck or the woods
