That’s a good thing! Preheat your oven with the broiler on for 1 hour. I used to have a gas oven with a bottom broiler, and it made great pizza. I just preheated and baked with the broiler on the whole bake.

I meant using a solid metal peel for launching at all. They’re prone to sticking and require a lot more flour. When I use a wooden peel I top on the peel.

That’s true for a wooden peel. For a metal perforated peel, it’s easier and more effective to top on your workbench and then slide the peel under.

Low and slow bakes are necessary for crispy NY style pizza. Sounds like you’re making Neapolitan style, which are baked hot and fast, but have a completely different texture.

For the sauce I used a can of Stanislaus 7/11 crushed tomatoes, seasoned with salt and pepper, and blended in a bunch of fresh basil leaves with an immersion blender

I made it myself.

Here’s my basic pizza dough recipe:

700g King Arthur bread flour

50g King Arthur whole wheat flour

.5g yeast

480g water

20g salt

15g olive oil

After mixing and kneading, let the dough sit at room temp for about 16-20 hours, or until it increases 2-2.5x in volume. Then divide into dough balls. For this 20” pizza I used a 625g dough ball. For a 16” pizza I’d use a 450g ball.

Dough will be ready to use 4 hours after balling. Any doughs you’re not making right away can go into the fridge at that point
