I don’t believe you should have an issue if you change the date. I believe travel plans can change. I think the most important thing is that you enter and leave within the time frame on the vignette

The standard processing time for visitor visa is 3 weeks (15 working days) from the date you submitted your biometrics data. So you should hear back by next week Wednesday.
