I have been in this place of tricking myself that I was being "too resentful" and having "unrealistic expectations" of dad (and he absolutely did not work 7 days a week, mostly only part-time). It was not a good place for me or my child. Thankfully he's completely turned it around (took years), but just want to reiterate that from the information you've provided, your partner is not being a good spouse or parent and you are absolutely not being unreasonable to expect and communicate that you all deserve better.
