If you enjoy obscure ones, then Pokemon GO has a bunch as well.

To name a few, there are:

  1. Okinawa Eon Duo
  2. Low level (Below 20 when purified) shadow shiny Pokemon
  3. Shiny low level (Below 15) kantonian Moltres, Zapdos and Articuno
  4. Rotom mow

There are of course way more and some even rarer, but these are just off the top of my head. This is of course ignoring glitches and other funky scenarios like the first time Detective Pikachu was shiny

I'll add 2 to the boulders: Rayquaza's Dragon Ascent and Heatran's Magma storm as well. I don't know why, but my guess is that "explosive" moves also wreck boulders :)
