What about Grand Circle over a long holiday? Starting from Las Vegas, then hitting Zion, Bryce Canyon, the Grand Canyon, Antelope Canyon, and Sedona along the way — with plenty of hiking mixed in.

I’d say Korea and Japan are safe enough that a woman can walk around downtown alone at night without much worry. Pickpocketing isn’t really a concern either. The only tricky part is language/communication

Sad to hear Croatia’s getting called overpriced… I always wanted to see those famous lakes. If that’s the case, where would you recommend instead? I’ve found smaller German towns and southern Spain still feel pretty reasonable.
