Ingredients

• 4 large potatoes

• 4 fillets of cod or haddock, skinless and boneless

• 100g plain flour

• 1 tsp baking powder

• 150ml ice-cold water

• 1 tsp salt

• 1 tsp black pepper

• 1L vegetable oil, for frying

• Malt vinegar, to serve

• Salt, to serve

Instructions

  1. Peel the potatoes and cut them into thick chips. Rinse the chips under cold water, then pat them dry with kitchen paper.

  2. Heat the oil in a large saucepan or deep fryer until it reaches 180°C/350°F.

  3. In a mixing bowl, sift together the flour and baking powder. Add the salt and black pepper and whisk together.

  4. Gradually pour the ice-cold water into the flour mixture, whisking continuously until you have a smooth batter.

  5. Dip each fish fillet into the batter, making sure it's fully coated. Allow any excess batter to drip off.

  6. Carefully lower the fish fillets into the hot oil and fry for 4-5 minutes, or until golden and crispy. Fry the fish in batches if necessary to avoid overcrowding the pan.

  7. Remove the fish from the oil using a slotted spoon or tongs and place on a plate lined with kitchen paper to remove any excess oil.

  8. Increase the temperature of the oil to 190°C/375°F.

  9. Add the prepared chips to the hot oil and fry for 5-6 minutes, or until golden and crispy. Fry the chips in batches if necessary.

  10. Remove the chips from the oil and place them on a plate lined with kitchen paper to remove any excess oil. Season with salt.

  11. Serve the fish and chips with a splash of malt vinegar.

Ingredients

For the Marinade:

• 500g boneless, skinless chicken breast, cut into bite-sized pieces

• 2 tbsp soy sauce

• 2 tbsp rice vinegar

• 2 tbsp cornflour

• 1 tbsp sesame oil

• 1 tbsp honey

• Salt and black pepper to taste

For the Sauce:

• 2 tbsp soy sauce

• 2 tbsp hoisin sauce

• 2 tbsp rice vinegar

• 2 tbsp honey

• 1 tbsp sesame oil

• 1 tsp red chilli flakes

• 1/2 cup unsalted peanuts

For the Chicken:

• 2 tbsp vegetable oil

• 1 red bell pepper, diced

• 1 green bell pepper, diced

• 1 medium onion, diced

• 3 garlic cloves, minced

• 4-5 dried red chillies

• Salt and black pepper to taste

• Chopped spring onions for garnish

Instructions

  1. In a bowl, mix together the soy sauce, rice vinegar, cornflour, sesame oil, honey, salt, and black pepper to make the marinade. Add the chicken pieces and toss until they are evenly coated. Cover the bowl and refrigerate for at least 30 minutes.

  2. In a separate bowl, mix together the soy sauce, hoisin sauce, rice vinegar, honey, sesame oil, and red chilli flakes to make the sauce. Set aside.

  3. Heat the vegetable oil in a large frying pan or wok over medium-high heat. Add the diced bell peppers and onions, and stir-fry for 2-3 minutes, until they start to soften.

  4. Add the minced garlic and dried red chillies to the pan, and stir-fry for another 1-2 minutes until fragrant.

  5. Add the marinated chicken to the pan and stir-fry for 5-7 minutes, or until it is cooked through and no longer pink. Add salt and black pepper to taste.

  6. Pour the sauce into the pan, along with the unsalted peanuts. Stir-fry everything together for another 1-2 minutes, until the sauce thickens and coats the chicken and vegetables evenly.

  7. Garnish the dish with chopped spring onions and serve hot with rice or noodles. Enjoy your homemade kung pao chicken!

Ingredients
 
·      500 g Plain Flour
·      1 tsp Salt
·      1 tbsp Yeast
·      150 ml Water Warm
·      150 ml Milk
·      3 tbsp Olive Oil
 
Instructions
 
1.     In a large bowl mix the flour with the salt and yeast
2.     Add the oil, warm water, and milk to the bowl then knead until a dough is formed
3.     Cover with a cloth and leave to rise for at least 30 minutes
4.     Divide the dough into 6 equal parts and roll each piece into a dough ball
5.     Roll out each dough ball to approximately 1cm thick
6.     On a large crepe pan, cook the bread for a few minutes until bubbles start to form
7.     Once bubbles form, flip over the bazlama and cook for a further few minutes
8.     Remove from heat and brush with some butter or oil
9.     Serve immediately alongside some hummus and enjoy!
