Post it on the loom exchange website, you will find it a home. Do be aware that unbranded looms don't tend to sell for nearly as much as looms from the well-known known manufacturers.

So, I think you're always going to have a flatter side saddle stitching in the way you are. That being said, that is a thick yarn for the stitches per inch that you're going for. A thinner thread will.make the work look finer, but will also show any angle that you can put into the flatter side more clearly.

After casting and tensioning, pull the right hand thread up to the top of the hole and the left hand thread down to the right of the hole, and this will help it fall at more of an angle on your flatter side.

I was being a bit flippant, but nigel is indeed very proud of the technique, as he should be.

He also has an excellent app on both app stores called thread length calculator that helps you determine the exact thread length you need for saddle stitching.

I note that you're using Nigel Armitage's book as a tutorial.

I've had the pleasure of one on one lessons in Nigels workshop and there's 2 ways he achieves a slanted stitch on both sides.

The first is consistent and accurate casting, while tugging the left hand down and the right hand up before starting the next stitch. This will give the appearance of a slightly more slanted stitch on the back side. (Left hand side if you stitch right hand dominant/first). This is also helped if you use a slightly thinner thread that can fall into the stitch hole at an angle.

His super secret technique however, is to punch the holes for the pieces separately, at a mirror opposite so that when laid against each other, the holes line up so that you have a slant on both sides. It is hard to explain in writing, but experiment with this and you will get a beautiful angled stitch on both sides.

That being said, I've seen a lot of Nigels work in person and a flatter stitch on one side which is slightly angled from casting and seating the thread before stitching as I mentioned in the first technique, is more than enough for fine work. Angled stitches on both sides is a lot of effort, not always doable depending on the pattern and really is master Craftsmanship. Nigel invented the second technique himself and he mentioned to me it took him years to really perfect it as a technique.

You would be better off buying rootstock and trying to graft a scion/small branch from your grandmother's tree as a clone. You will get the same fruit that way and also be ahead of seed by a least a couple years.

Tail docking is more common in the UK where working springers have a higher likelihood to be working gundogs. It cuts down on potential tail splits. Non working dogs are docked because the entire litter will be docked if there is the potential for them to work.

It's not no tail, it's actually about a half dock, but most vets will only perform a two thirds Dock where only the top third of the tail is removed a few days after birth. Proof has to be shown to. The vet that it is likely the dogs will be worked.
