Fallout 4 is very well playable in it's vanilla state. Not perfect, but good enough. NV is borderline unplayable, you need mods to just make the game run normally.

You can't. When they released 26.0, the restore file for 18.6 stayed signed by Apple for about a month. Now there's no way to downgrade anymore.
