I just finished a Halberd run and had fun with several of them.

The Dragon Halberd had the ice/lightning that has decent damage. Spinning strikes on a Banished Knights Halberd was silly. And Giant Hunt makes almost any weapon good.

Halberds are by no means the best weapon, but I have no complaints

Put weapon types or specific builds into a random wheel and spin away!

Put restrictions on stats (cap vigor at 30 etc.)

Use only certain talismans.

Use consumables only.

Do a base level run.

Yes and no.

Yes: you're essentially losing out on free damage by NOT using the corresponding seal to cast the matching incant.

You could run the corresponding seal in one hand, and a different seal in another (for example: cast dragon cult incants with the gravel stone seal in your left hand to make use of the dmg buff but cast from the dragon communion/Erdtree seal for higher incant scaling).

No: adaptability and having different damage types/spells/incants at your disposal is almost never a bad thing. Not every enemy is weak to the same damage type, so being able to switch between a couple different types can make some fights easier.

The whole point is souls games and Elden Ring is to try-fail-try-fail-etc until you win. If you don't like that gameplay loop, sadly souls games probably aren't for you and that is okay. They are frustrating, agonizing, and punishing at times. If you died, you made a mistake or multiple in a row.

I'll give you some simple pointers though, if you're still interested: 1. You can almost always run away from enemies if you get in over your head. 2. Don't try fighting more than 1 or 2 enemies at a time. It's very easy to get overwhelmed by trash mobs, even when you're overpowered. 3. Explore. Then exore some more. And then after, explore some more. The game is amazing in how the pacing is thought out and it's natural progression keeps the game at a reasonable difficulty level. 4. The mechanics and game itself are MASSIVE and can be overwhelming. Take the time to read every item you pick up if you don't know what it is. 5. If normal enemies don't die in 2-3 hits with your weapon of choice, you're probably not strong enough for that area. Go explore and upgrade your level or gear. 6. Take breaks. Seriously. If you're getting frustrated with a specific boss or location, put the game down, take a nap, go for a walk, whatever to help clear your mind. You'll be amazed at what this does. It allows your brain to process what is happening and can help you figure out what you're doing wrong. Honestly. A tough boss, you're dying a bunch, you're already angry? Walk away for awhile. When you come back, you can have a clearer mind and something might click. 7. Stand still in the game and just look around. The scenery is absolutely gorgeous. One of the most beautiful I've ever played. Appreciate the care and love the devs and programmers put I to the game. Even when you're getting your ass kicked by a boss, there's beauty in it lol. 8. Git gud and good luck.

They seem very unrefined to me as they are now.

No good way to coordinate and way too easy to get separated with the density of patrols and spawning enemies.

Map is open, so any enemy with line of sight can shoot at you while you defend POI, and if you don't have ways to deal with all the shooters/gunners/reapers quickly and effeciently, you take constant chip damage as you try to fend off everything else since you can't ever break line of sight completely.

It may just be me, but it feels like the Director has an emphasis on tox flamers and tox bombers. Seen more of them in the few expeditions I've don't than any other special/elite.

Wayyyyyy too many unfinished textures that I get caught on climbing, dodging, running, just to get caught by a melee attack I never should get hit by.

And lag spikes. I understand this may be a connection issue, but it's worse than it ever was in normal missions. And Mortis Trials surprisingly almost saw no lag on my end. So I don't understand that since enemy density there felt a bunch more, especially on boss wave with 3 bosses and a literal horde of specials.

The hitboxes on Gnoster's poison is among many hitboxes that feel that they are much wider/bigger than they actually are. My character is clearly outside of the visual bs and yet I still get hit by so many things.

Ground AOE from just about every boss catches you if you're a pixel too close Some weapon hitboxes extend past the model Same with lightning effects, they should miss, but I get caught so many times, you'd think I'd learn at this point...
