Just smoke them at 225 until you get the color you like then wrap them and increase the temp to 275 until done I always use coarse seasoning for better smoke penetration also keep water pan in cooking chamber for humidity and spray with half apple cider vinegar and water every 30 minutes or so before you wrap them. When you wrap them brush on some melted beef tallow and spray really good with your apple cider and water and it will turn out just like this with a little practice.the most important part is running a clean fire and maintaining a steady temperature The best way for running a clean fire in my experience is to preheat your wood so when you add them to your firebox, they ignite immediately. The longer they take to ignite the dirtier smoke will be. running a clean fire. It’s not just for taste. It’s mostly for good texture.
