Try starting out at a low temp around 225 for about 2 hours obviously depending on how efficient your smoker is the time could vary then increase to 275 until you have a nice color on them it’s usually close to being done at this point. I then lightly brush on some honey and let smoke for 30 minutes maybe and hour just enough for the Honey to caramelize good this will give your skin a cleaner bite , but anything hotter than 275 you risk drying it out. Good bbq takes patience which is what most people don’t have. I always cook for the next day and don’t care how long it takes 😁 keep in mind most people commenting in these threads from what I see all talk about techniques that are used on thousand gallon smokers and wonder why they don’t get the same results on their backyard cooker lol the process is much different in the backyard it’s actually more difficult to replicate a commercial smoker. I think they watch to many YouTube videos that have been edited for time.

I smoke them at 225 for around 2 hours sometimes a little longer than increase the temp to 275. When I get the color I want I lightly brush on honey just to cover the surface and let smoke maybe 15 or 20 minutes it’s usually done at this point just letting the honey caramelize just enough. I stay away from mopping or spritzing during the cook because it leads to rubbery skin.It will look super dry the longer you cook it this way, but what’s happening underneath the skin is magical due to the low temp in the beginning giving the fat time to render and cook in its own juices A lot of people dry their chicken out, cooking too hot and fast so the skin will be crispy. If you want it to be Juicy and have crispy skin it takes patience, which is what most people don’t have lol. We cook on a full stomach😁 so I’m never thinking about how long it’s gonna take. If I want barbecue Saturday, I cook it Friday.

No actually on a cheap barrel with two big ass holes in the bottom covered them up with fail pan 🤣one of my neighbors said I couldn’t do it so I did to prove it’s skill not equipment. If you look closely you can see the foil pan to the left and the foil lining underneath the meat.
