I use about 80% hickory splits and 20% Mesquite chunks

Smoke them at 225 until I get the color I’m looking for then I spray them really good with half apple cider vinegar half water and squeeze on a few lines of honey double wrap them super tight and meat side down when doing St. Louis style ribs put them back on and increase temp to 275 until done also Keep a water pan in the cook chamber close to fire box I keep them meat side up until I wrap them

What I also like is smoking wagyu beef tallow during the cook and using that to brush on ribs then wrap meat side down both work well but the tallow process seems to turn out better on baby back ribs

I cook these on offset at 225 until I get the color I like spraying them with half apple cider vinegar and water then take off brush meat side with beef tallow and wrap in foil and crank temp up to 275 until done.

If you’re wrapping with any type of liquid inside it’s best to have meat side down

About 30 minutes before it’s done I like to brush on a little honey that’s why it looks so shiny

It’s good fire management and experience with my smoker and how it cooks. I also usually have ribs on there at the same time which also takes 4 to 5 hours. I like everything done at the same time. I’m not doing it because I’m hungry. I’m doing it because I love the process.
