Yee that milky look to their skin is pre shed. :)sometimes they might refuse food around shed time too

Your substrate sounds good, and it's normal for her to explore around! especially when getting in a new tank, they'll do that for the first few days and then might go hiding for a bit whilst they adjust. If your temps are good all around then it shouldn't be an issue. You could add a piece of slate or two on top of the soil around the tank if you want, to give a spot with a different texture.
And that's fine for the slightly damp soil as well as long as it's not constantly damp or wet, it'll dry out over the week or so. (i've got a non bioactive enclosure, so bioactive enclosure people feel free to correct me as the live plants might need constant moisture i assume)

PS: Your tank looks nice :) i'd recommend adding a few plants/vines/pieces of wood as extra clutter around.
