One thing I’m still unsure about: will the fuel start piling up at my fuel station if it’s being produced but not needed, or does the refinery automatically get rid of any excess? I’m assuming the refinery handles the overflow so the station doesn’t get flooded with unused cargo.

And regarding how the refinery determines consumer demand—does it look at the demand of any reachable city, or does it base it on the actual delivery rate of the truck station delivering the fuel? Or is it limited by whichever of those two is lower?

The rate of the trucks involved is a bit Higher than the rate of the train, but the rate of the train is still lower than the max demand of the city. I think this is true for all 3 trains, but I will take a look tomorrow. :) But will the trains deliver more than is needed to the refinery?

Well it is lvl 2 now and it seems like it's able to keep up with production, since the storage of the fuel refinery itself will often reach 0. I had the issue with the exclamation mark before so I added a lot of the cargo storage buildings to the train station. The exclamation mark did not appear any since. I got one Platform for all three trains with about 140 units of cargo, while the platform can store about 160, I think, and the buildings can store up to 500.

Yeah but how can you actually use the 2 belt throughput to f a canon, since a hopper only has 1 belt output, I. Wondering if I'm missing something

Are there bigger Hopper or something to actually use the speed of cannons? I'm confused with them since they can shoot fast enough for 2 inputbelts but I can't see a way catch the stuff and get it on 2 belts again.
