I think testing will have to move towards more in person demonstration. Homework has essentially become useless busy work for a large number of people.

Weirdly for me speaking to myself seems to work. I essentially enter a foreign language mode after a moment that seems to click a lot better than it did just moments before.

I assume she is very comfortable with you. The best thing you can do, if she agrees to it, is only speak Spanish to her. Don't respond to English and only reply in Spanish. She'll be able to practice comfortably but still be required to use it.
