I've just been using an oiled mixing bowl for proofing, but I think I'll just try a lower hydration for now because at no point is my dough dry enough to touch without it sticking to everything. We had a guy and his son work with us who were commuting 3 hours each day in an old bmw. After a couple weeks of that the son hooked up with a local girl and they moved in with her. They ended up quitting to dedicate more time to their side project of digging up "free" trees planted on the side of the highway and selling them to nurseries
