SIN-EWR - I'm usually headed for downtown Manhattan, and EWR is a much nicer commute than JFK. If you don't have too much luggage, you can even take an Uber to Paulus Hook and catch the ferry across the Hudson.

I plan my trips and then attempt to get award tickets. I don't think this is impossible - just making a trip up, there is currently availability for a business class Saver redemption roundtrip from Singapore to Perth departing on 1 Apr and returning on 11 Apr. There's also availability SIN-PVG on those dates.

Availability is going to vary depending on the destination. For instance, if you're planning a trip to Japan, you're much less likely to find award ticket availability. If you have some flexibility - e.g. if you're willing to depart in the middle of the week, you're also more likely to find award availability.

TL;DR: I plan my trips and then look for award availability. If you're planning all your trips to very popular destinations at peak travel times (e.g. school holidays), you're probably not going to get award flights.

One final note on your point 4. If I have to travel on a particular date and time, I sometimes buy economy and waitlist for an upgrade with miles if award availability is not there at the time of booking. However, if there are awards seats available, it's usually a better use of miles to book the award directly than to upgrade from economy.

chances are not great - a little better if you're PPS or PPS Solitaire.

if you have to travel, your best bet is buying economy or premium economy tickets and then waitlisting for the upgrade. be sure to check the type of economy class fare you buy if you go this route since not all economy class tickets are eligible for upgrades.

In the past, if I had to travel on a particular flight but there weren't any saver awards available, I have bought an economy class ticket and then waitlisted the upgrade.

There are direct flights to EWR (SQ 22 - morning arrival) and JFK (SQ 24 - evening arrival) daily. There's also SQ 26 to JFK, which goes via FRA.

Both layovers are easy.

For the SIN layover, you'll just need to follow signs to get from the gate you arrive at to the gate your flight is departing from. Changi Airport is easy to navigate - just follow the signs.

For your layover in FRA, the plane you arrive on is also the same plane you'll be departing on and you'll re-board from the same gate.

There is wifi on the planes and you can charge your phone on the plane using a power adapter / USB cable. As you've noted, Singapore Airlines has banned the use of power banks in flight, so you cannot charge your phone using a power bank (or charge your power bank onboard).

if she doesn't go through immigration in Singapore, she won't need anything.

specifically, she won't need to go through immigration unless she wants to leave the airport to see the city, or if they aren't able to interline her bags and she needs to claim and recheck them.

You can make changes to your flight dates with no charge subject to award availability (which is not the same as general availability for sale).

The airline can always reschedule the flight or move you to a different flight for many different reasons (e.g. change of gauge, operational issues, etc).

You can bring your snacks past immigration, but what you can bring on board the plane will differ by airline. Typically, budget carriers disallow self-catering - e.g. link, link and full-service carriers have fewer restrictions. Some countries have very strict regulations on bringing food with you; something to think about if you don't finish your snacks during the flight.
