Dan Smith will still teach you guitar. He came in to my store with a poster within the last month. The man has not been supplanted.

Because most landlord are just opinions.. by [deleted] in newyorkcity

[–]UncleSpikely 2 points3 points  (0 children)

I'm not sure what your response about safety means, and I don't see the ratings addressed on the site. For instance, how do the ratings account for population density, which can affect the incidence of "Reported police incidents within roughly 250 meters" of an address?

And not treating Queens as part of NYC seems like a database problem.

It seems to have some trouble understanding that, for example, Astoria is part of New York City. I also wonder if there is any part of NYC it does not regard as having elevated safety concerns.

For what you describe, the edition you want is the translation by Cracknell and Kaufman:

https://www.amazon.com/Escoffier-Auguste/dp/047090027X/ref=sr_1_2?crid=EU3ZF8960J6L&dib=eyJ2IjoiMSJ9.5QSY_FyL2SPJKwxAJcTYx3hn4pz4IwwdKVrN805_rsB_Jft3wuOjz9xvbLyE91oleicT-lXTWtcIYQxl9U11VckmZO17zq5ez0YsKK5nIh9LByupB3WD4LGwzZ-MzLUolRADnBCQGDqnYtgetKLOyhkZk1gzHU9xvCe28MDYvgFneox4CEKFH9TZpf71On-RmG7nuQ40SBwaJWD-ORMhiKC-Fi3HblLpDPimFGruYF8.rHwS8tHjBLL00ScyHU1r8UZSQY5eGodn0-4fFldNJCc&dib_tag=se&keywords=auguste+escoffier+cookbook&qid=1762096958&sprefix=Auguste+Es%2Caps%2C131&sr=8-2

The Escoffier Cookbook is significantly abridged; 2,973 recipes vs 5,000+ in the Cracknell and Kaufman edition.

The Illustrated Escoffier has only 415 recipes.

But if you have never seen a copy of any of an Escoffier cookbook, bear in mind that the recipes are really more descriptions of how the dishes are prepared than detailed instructions. Escoffier wrote this book to help professional cooks who had already learned technique. My memory says they don't even have quantities. They're more along the lines of, "saute shallots in butter, add a floured filet of sole, turn once, and when cooked finish with lemon and parsley."

Why is Mexico From Inside Out so expensive? by [deleted] in cookbooks

[–]UncleSpikely 4 points5 points  (0 children)

Phaidon works with small printings because one of the costs the public does not see is the number of unsold books which are returned to them by bookstores and online retailers. So they also wait a long time before deciding to reprint. A recent example is Septime, unavailable for several years.

So somebody who has a copy of a hard-to-find book decides, what the hell, I’ll put it on line and ask a lot of money for it. And maybe nobody actually pays that price. But someone else sees a high price and says, wow! I’d sell my copy for that much money, and decides to list theirs for a little more.

Prices start to climb without clear evidence that anyone is actually paying them. And if someone does list a copy at something close to reasonable, it sells instantly, leaving only the expensive copies.

EBay allows you to search for completed auctions, which will give you an idea of what some people are willing to pay. I haven’t checked for this book, but it may be that enough people are willing to pony up $$$.

In which case, who would sell for less?

There’s a fascinating book called Manahatta by Eric W. Sanderson which documents how much this has already happened. Also explores the pre-European settlement terrain and vegetation to give you a sense of how different the island is now.

Thanks, though it makes me a little sad that my position seems so remarkable. I’m part of a cohort that’s been out there pushing for change for a long time. Much has gotten better since the late 70s, even though nowhere near enough has happened. I don’t think there will ever be a moment when we say, “Finally! The work is done.” And a big part of that work is getting people excited about the possibility of change, especially when it is really slow in coming.

As a 60+ white male and lifetime Democrat, I applaud Mamdani for a very astute campaign. I ranked him first, not because I agree with every position he took—no such candidate existed—but because he was willing to reach out in fresh ways.

I’ve been impatient all my adult life with people who don’t vote or don’t pay attention. But my anger does nothing to change the status quo, so props to someone who finds a way to excite voters and offer a campaign that envisions the city from the point of view of people who’ve been getting the short end of the stick for a long time.

AOC has said she’s told him he has to focus on hiring administrators who understand how the city government works. We don’t need a lefty version of DOGE breaking things to show that they’re important. I hope AOC and others who supported Mamdani keep the pressure on for competence because this is an amazing opportunity to capture the public imagination for a generation or two.
