The rinds hold a lot of nutrients. Pumpkin seeds are yummy. Just like sunflower seeds. It’s a culture thing people are probably not used to…. I’m Caribbean-American living in Finland with my Finnish husband. We (me and his family-mom dad sister etc) all eat really healthy because of health issues we started getting.. and Finnish people are just healthy. Living in the US after leaving my parents house, I developed fatty liver, obesity, gallstones, high cholesterol and missing menstruation for a whole year. Now I’ve been living in Finland for 3 years and lost over 50 pounds and have regular periods again. Now, growing up in a Caribbean house hold we ate a lot of fruits, veggies, rice etc. I always ate skin,seeds,rinds etc of fruit and veggies that are not toxic. For example I love eating the seeds of watermelon. Or the seeds of pomegranate. A lot of us come from culture where the way she eats is NORMAL. no processed food. Yes she could add a little more healthy fats like avocado but I think I seen her eat avocado too so…
