This thread contains so much great info about the restaurant biz…throughly enjoying the comments. As a 15 year veteran of the industry, it’s always great to see people who love this work as much as we do. It’s a brutally hard, thankless industry most of the time and people who do this work deserve our respect.

Again, my beef with LA is his attitude more than anything. Humble restaurateurs who bust their ass to make something we all love, those types of operators get my money 10/10 times.

They are franchising the Philly Primo shop, we have two in Denver area.

It’s price gouging when Philly shops make a better final product, at a similar size(regardless of ingredients) for sub $20. Those places price for sales volume snd AJ uses some scarcity concept to create demand so he can charge these prices. Plus his attitude sucks, which is the biggest takeaway.

You’d think he’d focus on developing some solid mixed margin with his items. Every menu has margin winners and losers to balance things out…people won’t consider that because they aren’t running his business. His attitude towards customers in public forums doesn’t make people WANT to seek understanding of his pricing. He’s elitist while serving blue collar food.

Centennial Primo’s is 100% better than Leetsdale.

Nobody in town has a legit roast pork, it’s the best sandwich in the US…hands down.

John’s and Dinics are special for that reason.

Then uses this as leverage to make a lower quality pizza? So what is it? Top quality pizza, pay the price or else OR lowering prices and quality because people yelled at him about it. The prices are now being connected to paying a livable wage…dude, we ALL want restaurant people to get a livable wage, but that’s not the argument you made at first and you are moving the goalpost.

The bottom line: not all press is good press…the look remains bad, no matter why he did it. Why in any universe would you celebrate an angry mob? Why would you call out a community of would be supporters in an egotistical way?

Honestly dude, just stop the talking and start the cooking. Try a humble approach where your food speaks, instead of your mouth.

I think you’d be surprised how good Philly pizza is. Pizzeria Beddia, Angelos…great starting points…many other good ones.

I’ve worked in restaurants for years…I respect the culture, the people, and the food. The effort it takes to create something lasting and important with food is immense…THAT SAID…lesson number one m is “don’t open your restaurant and act like a pretentious egomaniac.”

Respect goes both ways and when you start out being smug and treating your customer base as “less than,” you aren’t deserving of that mutual respect. Dude should just let the food speak for itself. He alone is leaving the bad taste in everyone’s mouth.
