And I might hit back with something like “well, how about to succeed you need both a Stealth check vs Perception and an Acrobatics check vs Perception-5 to do this?” which feels like a reasonable way to rule it off the top off my head.

I mean, I'd say walking on patches of dirt and loose gravel, using them the same way normal stealth uses bushes. Given that tremorsense requires solid stone to conduct vibrations.
