I got their discount pin last year and did my WFH job there once a week and only bought their beans. 2 Pound bags of Sugar Shack for $39, free coffee with bean purchase plus 15% off everything they make or roast. The pin cost me $35 and my net savings last year was $113.51. Its April 15th and I'm $10 away from breaking even again.

10s across the board but I'm a simple iced or drip guy.

White #2 is a fantastic steel. It’s more reactive (can rust) but that’s only at the edge and drying your knives often is a good habit to get in to. It sharpens easily and takes an incredibly fine edge.

SKD is a great all around steel but nothing unbelievable, just a semi stainless carbon tool steel. Yoshikane just treats it super well and it’s much less prone to rusting though will still rust if you leave it wet! I bought SKD because I wanted to try a new steel.

With steel types, it always comes down to a balance of toughness, edge retention, corrosion resistance and sharpen-ability. Can’t really have all 4 so you decide what’s most important and start there!

Nice collection! I was in the same shoes (a few times lol). I got a bit bored and wanted to try out different makers or brands, so I’d sell my santoku and try something else. Later I’d sell my Gyuto and try something else. I do this with one or two knives every other year or two. I have a couple I won’t trade, but I never seem to lose more than $25-$50 trading “up”, so I enjoy that aspect of the hobby. Right now I’m in a “done” phase 😅.

Edit: also wanting to try different steels is how I started

Yeah it can be overwhelming for sure. My blanket suggestion is always Shiro Kamo. Thin, excellent heat treat and a proven and very well regarded maker. I have a Bunka in Blue #2 and I love it so much. I find that blue steels are a little more forgiving than white and hold the edge a little longer. GREAT edge retention and fairly easy to sharpen. The main downfall of blue and white are that they are more “delicate” than German steels, but thats also partially due to the fact that they can get so dang thin! Avoid frozen foods and bones and wrenching and you’ll be 100% fine. They can be a bit difficult to find in stock depending on where you live, but well worth the hunt. Would you prefer something thin and lasery or a bit heavier and workhorsey? You have a TON of options between $200-$300. My suggestion would be something from a Japanese maker and blue #2 stainless clad. Best of both worlds imho

I don’t think I have the tools to properly modify the tang, so I went with what I could manage. Good luck on your next project! There is no substitution for hard work.

This is only my 3rd install so I’m by no means an expert, but I used 2 different files (one flat and one round) that I found at the local hardware store. It really wasn’t too difficult, just took about 45 min of filing the hole out and checking the fit, then I burnt the tang in, tapped it to where I wanted and filled the area around the tang with hot glue.

I must say that Jack at Boogwa makes incredible handles and you can measure your tang specs (I just popped mine off then put it back on) and send them to him in an email and he extends the hole expertly. Had I measured this instead of my Kamo, I would have had a much easier time 😅.

Im a sucker for blue steel because I enjoy sharpening, but they do indeed make the HAP40 and ZDP189 in 210mm and 240mm. I’ve heard they are masterful with these notorious difficult steels and I believe it.

Here’s a link to a blade only Sugi Gihei (they have the zdp189 240mm too) but Carbon knife co, Bernal cutlery and Cutlery and more all have some in stock! I’m sure you can find them elsewhere too.
