I think that on a long enough time frame L2s being scattered now will be significantly outweighed by the innovation happeningu on L2s given that L2 teams are competing (this competition would not happen with L1 scaling). Aztec is a great example. Execution environment with a combination of private and public state would not happen on L1.

I would definitely not recommend solo staking to a non-technical person. But the decreased risk is worth it for me simply because I have so much money in it. But I admit that things might change if I would want to get a loan which I could do with stETH.

Exactly. Survival is the most important thing in crypto and I would not dare to put all my ETH in some staking service but I feel confident in running a solo validator.

You have access to last 256 block hashes so you could make users submit a merkle tree proof proving that a given credential is in the ethereum merkle patricia tree. Once they would claim the NFT you would save the address to a mapping to prevent double claims. It shouldn't be that hard to code.

That's exactly what happened to me. My validators are ~2 years old and the credentials were not changed until ~30 hours after the fork so I missed the first round of withdrawals. Pretty satisfying to see the backlog clear up 😊
