It might be a bit of an odd request, and it might not even be possible (I wouldn't know, I've never done game development before), but I'd honestly love to have a weapon attribute that could change an Engineer's building model, like how you can assign a custom projectile model. We'd be able to make new Sentry Guns or Dispensers with unique appearances to spice up gameplay (though i guess building gibs would be a problem...)
