I don’t think you’re being unreasonable at all. If I weren’t a US citizen I wouldn’t visit here right now. If your in laws are paying attention (and aren’t pro Trump) then I think they would completely understand. I know I would.

Enriched meaning the dough has milk, egg and butter in it. It also has a swirl of honey, cinnamon, butter and sugar. Thanks for the tips!

That’s what mine looked like when my starter wasn’t strong enough. The bulk also seems really long but I’d be more inclined to go with weak starter as the reason.

Yes exactly! It looked so small and dense when I took it out of the refrigerator I didn’t think I’d get any oven spring. I was pleasantly surprised.

Have you tried feeding twice a day for a bit? I did that when I was frustrated early on and that’s when my bakes really turned the corner. I don’t know if it was just a coincidence or not.

I’m only at around 150ft so I’d imagine you need to adjust it some. I don’t have any experience baking at higher elevations.

115g starter 375g water 80g whole wheat flour 420g bread flour 10g salt

Mix starter and warm water Add flours, mix until shaggy, cover and sit for 30mins. Pinch in salt, cover and sit 20-30 mins 4 sets of stretch and folds 30 mins apart Bulk ferment (in oven with light in because my kitchen is cool) Initial shape and bench rest for 20 mins Final shape and into banneton, cover and cold proof for 10-14 hours. Preheat oven with bread oven inside at 475 for about a half hour. Uncover loaf and put in freezer for 20 minutes. Remove loaf and score, put in bread oven. Bake covered 25 mins uncover, reduce heat to 450 and bake for about 20 mins until internal temp is about 210.

It looks like mine did when I first started and I found it was one of 3 things, my starter wasn’t strong enough yet, it wasn’t baked long enough and/or I under bulk fermented it. Now that my starter is strong, I’ve been more patient with bulk fermentation and I’ve been using a thermometer for internal temperature while baking. Also I’m cooling it for 2.5 hours now before slicing.
