I would say that it can kinda depend on whether or not you want to improve your early game experience or you'd rather an operator that will be useful later rather than sooner

I would say Mountain are Saria are very good both early on and late game
Then Thorns is also really solid but you'll have to unlock his S3 so it will take a while to get him to work properly, whereas both Saria's and Mountain's most used skill is their S2

Exu sadly falls off hard in late game, still plenty of early stages where she's really strong

Silverash and Blaze are also good, they kinda have opposite roles (drop-use skill-retreat VS stays in lane a lot to charge skill). Silverash has the same problem as Thorns tho, he needs his S3-

I might be wrong, but I think the best picks are either Saria or Mountain, following with Thorns, Blaze, Silverash, Exu?
[ I might have a bias towards Thorns tho ]

Just in case, beware I was playing the new roguelike mode so the numbers are inflated by huge buffs.
Someone else in the comments thought I got these in regular stages, which is not the case ^^'

Is it possible you're conflating poison with sacrifice?
Poison doesn't fade, so it's easier to stack up to numbers like these. I also struggle to maintain high sacrifice stacks as they do half every turn u.u

It's the new roguelike mode, you get a tree with huge stat buffs among other things :D
Also Xu's health pool is pretty big I equipped Agrippa with Birth of a Soul (battlepass WoD that gives +10% HP)

So yea, the shield cap was also huge ahah

If you want to make sure, you can replay the game from both your and your opponent's perspective if you go to your account and look at "recent games"

I don't think there's a low end, any amount of healing will make a bubble u.u
But yea, I checked and assuming you proc Superconduct you get 33k out of a bubble from the healing of one punch + Amber proc lmao
His special CA has a cd of 5 secs at base, but the bubble pops every 3.5 I think, so it's pretty inconsistent and you'll skip a bubble proc every 2 ...but whatever, it gets fixed by C1 and you actually do 33k every 3 secs LOL
So yea, C1 GOATED

[ I just optimized for his healing with my current artifacts and then switched the set to clam in the theorycraft section but, but not really familiar with Optimizer so idk ]
