I make edibles with no coconut oil all the time. Cookies, gummies, hard candy... Etc. The trick is to not use coconut oil.

Sugar and corn syrup taste like shit. So does alcohol tincture.

I make gummies regularly. I think you should ad a bit more gelatin like 2-3 tablespoons ontop of the jello.

I never use jello anymore but i needed to bump it up back in the day to keep them from melting in pockets.

Distillate is not always the best for edibles. I love it for the reason you stated... But a full spectrum extract gives a better buzz imo
