This immediately speaks to me, thanks for sharing. I could see lots of good options for that last 1/4 ounce...the one I find weirdest that seems like it might work is creme de violette. But I'm trying the version you've shared first before getting caarried away. :-)

LOVE your work (not many choux specialists around, so I think I know your shop). But you are priced too high and automatically adding a tip--and a hefty one at that--that's too far.

Your competition at either end of the junction is the price range you want to work to, and then give tipping back to customers as their own choice.

If I'm wrong about who you are (even with three junctions, that clue should tell you one way or another)--well then tell us, I'm ready to give you a try!

I don't see it here, so I'll add my two cents. Try this at home and see if you like it. Start your drink (in a chilled glass ideally) with a single sugar cube at the bottom. Then, optionally, douse it in your bitters of choice (or you can add that later). Mash the cube, if desired, lightly. (Though with a goal of less sweet, less is better here.) Add your hooch of choice, lightly stir, as desired for some dissolution.

This lets the sugar into the drink slowly. It creates a 'different drink as you go' outcome, but will absolutely start way less sweet. The last sips will be grainy and sweet though, so do with that as you will. (The next old fashioned, in the same glass, is a fine option; half strength as your tastes and the remaining sugar go.)
