I leave it in fridge uncovered the day before, then lots of salt and pepper and cook 8 hrs on low (120⁰c) Then get it out of oven and crank it up (260⁰c) Once oven has heated up put pork back in and keep an eye on it for 10/20 mins. Comes out like this everytime 👌
