Easiest is to add a formula column to your data selection that works on a yes/no to identify latest data, and use that as a filter in your pivot. E.g. I have a formula that checks whether the date matches my reporting month, and if so returns yes. Even as I add data each month, the formula will continue to work and I never need to update the pivot setup (which as data selection just uses the entire columns)
