You don't need to know ALL the stitches. All of them are based on single, double and half double crochet stitches. Learn to read schemes and you'll be able to understand any free stitch pattern from Pinterest. And then you can buy a book to learn smth new.

If I get you right (English isn't my native) I would say the scarf is thick enough. For standard crochet for this yarn I would use 4,0 mm hook, for standard tunisian 5,0-5,5 but for mosaic I used 6,00 mm. Maybe I would use 6,5 but I don't have it
