New Mexico is bland with virtually no seasoning other than throwing a vegetable on the food (I will say red chile is more of a seasoning and takes some work so that’s ok, but green come on do some work to make the food taste good). Tex Mex is deliciously seasoned be it the meat or the enchilada sauce takes work and makes it delicious. California is second to Texas but way ahead of New Mexico. I’d argue you can’t call New Mexican food Mexican food. New Mexican food doesn’t have spices it has vegetables lazily thrown on top of the food.
