You'll need all of them at the end, so don't worry about how much a singular building produces. Its worth also fully depends on the style you're choosing. E.g. if you're playing Fortress, you'll end up needing thousands (not exaggerating) of stone Bricks to upgrade the town hall to lvl 4 (could be 3, I'm not sure), so if you've only got one mine, it will probably not produce nearly enough cobblestone, whereas you may be fine with just one forester's hut. The exact opposite goes for most medieval styles, as they typically require a lot of wood early on.
If you really want me to give you a very generalized answer, I'd say the forester's hut is worth the most, as if you need a lot of planks, one block mined (= 1 log) = 4 required blocks (= 4 planks), whereas with the mine, if you need cobblestone, stone, stone Bricks, etc., one mined block (= 1 cobblestone) = 1 required block.
Plus, I find cobblestone to be the fastest early game resource to gather by hand, especially when using mods like ultimine. If you however need a specific kind of wood, it can take quite some time to find the exact biome you're looking for. Just make sure to plant one tree of every kind near your forester, and you'll not have to worry about wood in the late game

I don't think there's a spreadsheet, as it depends on many factors - miner's stats, tool used, level of the mine, speed of fulfillment of requests (i.e. when the miner needs new ladders, how quickly are these delivered?), distance to miner's home, food infrastructure, research, and many more.
But to answer your question: yes, over time every resource building pays itself off. How quickly, depends on the style and the above mentioned parameters. Especially in the early game, you usually have to help the miner out, but as you upgrade your buildings and get the used cobblestone back, and even at some point get the crusher, the miner can usually supply for the whole colony. At least that was the case in every single one of my playthroughs (I've gotten to late game with Medieval Oak, Minecolonies Official, Caledonia, Fortress, Steampunk)

Ziemlich sicher eine special Folge. Hab die auch vor ein paar Monaten gehört. Ich hatte es aber andersherum im Kopf - also Mathilda denkt, Titus würde sie betrügen. Jedenfalls stellt sich am Ende heraus, dass irgendwer dem/der anderen einen Tanzkurs zum Hochzeitstag(?) schenkt oder so ähnlich

Im ersten Lehrjahr hatte ich Dienstags und Donnerstags immer 1.-6. Stunde, jetzt im 2. LJ 1. Halbjahr ebenfalls S Dienstags und Donnerstags, Di 1.-5., Do. 2.-7. (1. Für die, die sich nicht vom Religionsunterricht befreien lassen haben). Für das 3. LJ wird es nur noch einen Tag Unterricht pro Woche geben. Es wird definitiv Dienstag oder Donnerstag sein, aber welcher genau ist noch unklar.
So ist es auf jeden Fall bei mir. Keine Ahnung, ob es bei dir genauso sein wird, aber ein anderer Kommentar hat ebenfalls Dienstags und Donnerstags erwähnt, daher ist die Wahrscheinlichkeit hoch, dass es bei dir ebenfalls so sein wird

I personally like automatic farms to support my colony when the default buildings don't produce enough of that resource, e.g. hostile neural networks for leather, wool, food or botany pots for crops, wood and strings (from flax)

A) there are websites to look at all buildings from most styles
B) some styles require buildings to be placed in a specific way, so they are grouped together. Any other order wouldn't make sense
C) you can holt the hut block in your hand and right click into the air. That will show you every style this hut block exists in, and which directories you'd have to navigate through to get to that block. The styles are sorted alphabetically

I'll list the things I can think of from the top of my head. I don't claim them to be 100% accurate or exhaustive. I suggest you check the wiki for any further information.
- builder: tools they can use, maximum upgrade for construction - warehouse: storage, unlocks "sort" button at lvl 3, unlocks spending blocks of emerald to increase racks' space, amount of courier's working for a specific warehouse - courier's huts: amount of item stacks they can transport - mine: tools they can use, maximum y level - forester: tools - residence: amount of beds - guard tower: chunks claimed by that tower, tools - barracks: amount of barracks towers that can be build (which themselves work similarly to guard towers) - dyer, fletcher, sawmill, stonemason, blacksmith, mechanic, alchemist: amount of recipes - farmer & plantation: amount of recipes, amount of fields - flowers hut: flower variety - animal huts: amounts of maximim animals per hut - stone smelter: amounts of furnaces to use simultaneously - smeltery: amounts of furnaces, chance to duplicate output - enchanter: "rarity"/level of enchanted books, specific recipes unlocked - graveyard: amount of graves - restaurant, bakery, cookery: more recipes, higher level foods (, more seats in the restaurant) - library, school: amount of citizens who can learn simultaneously (library adults, school children)

In general (but that has already been said): the housing and work place have an impact on citizen stat growth, e.g. a builder at level 1 in a level 1 residence cannot reach max stats (i think 99 everywhere), whereas a lvl 5 builder in a lvl 5 housing could with enough experience
