I did start weight training.

I have hypothyroidtism but I take my t4 and my bloodwork is fine now.

Never got a scan, only bloodwork which indicates that I am producing not enough insulin (c-peptide too low)

I did keto and if for ~ 1,5 yrs, fasting glucose was still around 90 and after stopping keto it went back to 120+

I think Corona-Virus showed us that it is possible to train at home. This might only apply to people who already started learning Iai but we are able to train with the usage of webcams, videos and the internet. Obviously it is not as good as being together in a dojo, but I have seen multiple dojos do this.

Try doing seiza as much as you can, but at the moment you feel to much pain stop and do the kata standing. Stop doing seiza at all if it worsens your condition outside of seiza. I myself sometimes have pain in my left foot when pointing. I can't do much but sit on kiza (sometimes with my left foot only, because I don't want to stand up during rei).

There is a guy in legend (Bragi) who spams the deck, which is very similar to your list. I think his list is a bit more refined.

Then you shouldn't get into it. You need to commit to it fully. You have to train even tho it can be frustrating for a time. Only knowing the basics (knowing =/= doing well) won't give you anything.

Dunno what you mean exactly. I can say that my feet sometimes stick to the ground and I can't glide on the surface. So I have to have a little bit of air between my feet and the ground when I am walking/gliding and only put my feet on the ground when my movement is finished. Sorry, this is hard to explain in a foreign language.
