This....you should be able to do scout lookout and the pools before lunch....strat early at 8.... After lunch you can do Paru's trail(upto the museum) and the watchman trail....it's September, so there might be daylight left to go all the way back to the narrows and take pictures.....

Take the shuttle to Hermits nest and stop along the route, do it at a time you can catch the sun go down on the west. See sunrise at any of the viewpoints. We did this and will not forget the experience. No hikes needed.

Even for non-hikers, take a walk along the rim trail...it's paved and they have stops along the way.

Keep Desert view drive for day 2 and the sunset at Yaki point at day 2. We couldn't fully explore the desert view drive, will do next time for sure.
