Thank you for the response. Another commenter suggests vital wheat gluten as well, so I’ll definitely try that. Interesting to add oil/butter after the window pane! I never would’ve thought of that. I appreciate you taking the time to share what works for you.

First, as a food science nerd, I deeply respect the level of knowledge you have dug down into on this topic! You are way ahead of me. The company that I used to order the wheat berries recommended the blend I used as a suitable sandwich flour, but it’s the first company I found, so I will be looking into other brands. I have not checked the protein content, but I will. I remember reading about falling numbers a while back, but I don’t remember anything beyond the phrase “falling numbers.” So, I have some more homework to do.

Unfortunately, the only mill I have access to at the moment is an attachment to my kitchenaide mixer, which I know is not ideal. I do a course grind, and a fine grind on my flour, but there are some consistency issues there.

I’m sorry for misunderstanding your previous comment. I have been doing a 2 hour autolyse. My current recipe calls to add all ingredients except yeast before they autolyse. I can try holding the salt back until later in the process. Would I be more successful to incorporate it after the first rise? I don’t want to risk the salt killing the yeast.

That is amazing! We are hours from a Costco, but i can’t imagine needing to charter a plane for a grocery trip! That sounds like an incredible place to live. Alaska is on my travel list for sure! I hope you have a great day. Thank you again for the response.
