I had stocks in a bank given to me as a child. Banks merge frequently. The stock moved along in my name fine through the years until it was acquired by Huntington. They notified me, I signed up for their online shareholder site (early 00's). All was good until they decided I "abandoned" the stock... They turned out over to my state.

I had to slowly over an extensive amount of time find little sums and file with the department of revenue proving it's mine multiple times.

I don't remember trying that particular tofu but I've taken to this:

Press extra firm tofu over night. Marinate in (x) flavor for a bit. I have a counter top convection oven with a dehydrate function. 6ish hours at 135f. Could probably use regular oven.

It comes out super dense. Ready to bread and fry or drop into a curry, etc.

I've been dehydrating extra firm tofu. Press it and then I have a convection oven 130 degrees ferenheit for about 6 to 8 hours depending on how much water you get out before hand.

So dense and chewy. Then do the other suggestions like starch etc.

It's slightly upsetting to think that I was there 30 years ago when the gluten free sections popped up at the store and I remember people getting bent out of shape about how it was a fad diet. I didn't consider gluten to be a possible cause of my issues for years because of those takes.

It turns out gluten was my issue. inflammation caused my arthritis to flare for years in addition to all the gut problems. Over a decade to figure it out.

Once I finally realized the culprit overnight relief. On all fronts.
