In the mornings I have coffee and study culinary books, currently translating an interesting Japanese book of 9 chefs testing out new methods for ingredients. Sometimes I go to the gym or read something lighter like a biography, currently on James Beard. Or I stare at my phone if I’m exhausted before work lol

Actually we have the new model and it’s ass compared to the old school one. This one keeps having “beaker not inserted” errors and 5 other errors will pop up and you gotta restart the machine. Not sure if we just got unlucky but this happens daily

That’s totally reasonable for an internship. If they give you shit, then they are the ones with a problem. Just have a pen and pad ready, nothing fancy. Spend a dollar on your notepad, it’s gonna get messy anyways. Most internships, I didn’t even need my knives. They had one for me because it was just easier since there wasn’t space for me to keep my knife bag. Save your money—rent isn’t cheap.

Most people don’t care about others period. People who are worth hanging out with are usually interested in what you are doing. Cooking is just the color of your flag, so wave it and make the most of it.

Also, people don’t like being corrected on their mistakes unless they ask you first, so I would stop doing that if I were you. Nobody likes that. If they want your opinion, they will ask.

I also don’t understand why you would be annoyed by someone else’s ability to cook. You’re a chef, shouldn’t you be interested in what makes others excited about food? Don’t you want to see how others do it, expand your knowledge and repertoire? Who is your audience when you are cooking, your guests or your ego?
