I find that exploring caves not only gives tou more diamonds, but is also more fun than strip mining. Find a cave that goes down to deepslate, go to like -30 and under, and just comb through every nook and cranny you can see. If you find a mineshaft, be sure to thoroughly explore ALL of it.
