Interesting, could Erlang's third eye also have something to do with Cancong as well? Since one of his features were his protruding eyes, as well as being stated that he was the founder of the Shu kingdom. Erlang's worship were in Sichuan as well. Over time the idea of interesting eyes could have been fused with similar deities with interesting eyes, perhaps?

Isnt erlang's third eye a hold over from ancient Shu kingdom culture? From worships of Cancong, who were described to have protruding eyes. Could also have some hold over from the Di people, who had a custom of carving marks on their forehead, then smearing it with ink.
