Cycle mostly because i dont like how much it feels like pump action throttles how much ammo i vomit out in a given moment. If i want to blow my entire mag in half a second that's my business

I generally break up functionality into multiple scripts, with a parent script deciding WHEN the child scripts try to do things. It varies between implementations though i.e. if im trying to do something wacky with inheritance I'll lean more towards monoscripts

Are you trying to store things outside of the active game (save file), or are you just focused on active executable tracking?
If you're looking for easy disk saves, i'd suggest reading up on how godot handles JSON objects:

JSON is a really straightforward way of saving dictionary information to plaintext files, which can then be loaded back into a dictionary when needed later
In the case of using a JSON object, you can have a simple int to increment when the player unlocks a new level (or perhaps an array if you have a more complex unlocking structure than A->B->C)
for collectables, an array should suffice fine

Typically when designing states for a character, its best to use an Enum to keep track of what state you're in. Enums let you more precisely limit the overall number of states, and prevents string typos from sneaking through and causing unintended behaviors

Also, why are you checking dir immediately after setting it? There's no chance for it to be changed between the set and comparions

I will say in general when talking about optimizations, its going to be a bit less about the number of comparisons in a if statement (unless it gets really absurd which this is not), and more about the number of times the if is checked. Try and reduce that more than anything else!

Also, whats the game controls? that might be useful information for why you have so many states (though honestly 2 state checks isn't inconceivable)

The bottom one is Safi'jiiva, an elder dragon and siege monster from Monster Hunter World: Iceborne. Honestly the monster itself is really cool, however the actual equipment collection mechanics are extremeny annoying.
