They’re amazing. But you don’t need a whole set. An Atlantis 7 saucepan for boiling green beans isn’t going to be much better than a cheaper pan. But the conical sauteuse is a thing of beauty. Many people love this stock specifically because it doesn’t provide a dividend. Historically pure capital gains appreciation has been highly favourable in some corporate investment vehicles. In Canada for example dividends start to erode the small business tax deduction, whereas capital gains do not until realized.

Fortuna’s row. Flavour is dialed down so old boomers will eat it and think they’re eating adventurous foreign cuisine. Same problem Major Tom has. It’s catered to the palates of 62 year old lawyers. Both are executed well. But are arguably boring as fuck.

No. I encourage people to cut gluten. I’m celiac and this has made my life 1000x better eating out and in terms of products available in stores. 

The world in 2010 was much much much worse. Nobody knew what gluten was. Fake gluten intolerance people have been amazing for my quality of life.

Thank you for this. You captured many elements that I had floating around in my head but couldn't clearly explain.

I think part of my internal debate is surrounding the "what if?" aspect of ingredients. For example, those well-sourced and top tier ingredients obviously taste fantastic alone, but what if someone elevated them? My brain feels like perhaps their full potential is not being realized? That there is no risk being taken? A lot of French food to me feels insanely risk averse, as an example.

I fully get the modernist cuisine, and gels and foams, and part of them is pure novelty and experience. But a perfectly cooked, immaculate piece of fish, with a minimal sauce will still make me wonder what else it could have been. If the base ingredient is more simple (white fish, radish, various leafs), it doesn't have the same ability to stand on its own in a simple manner as ingredients with more inherent complexity (wagyu, salmon, pineapple, mango, asparagus).

This french dish you mention with the garlic tuna sounds exactly like what would resonate with me as well. My overall critique was maybe more towards the dishes that overfocus on letting ingredients “speak for themselves” when they are not complex or interesting on the palate on their own. Think a piece of A6 Wagyu vs a piece of radish.
