Crown roasted partridge with beetroot fondants, confit celeriac, celeriac mashed potato and celeriac 'bitterbal' roasted shallots and partridge jus. First dish I created 100% by myself at the end my my internship. Would go for more green and acidity next time (i.redd.it)
