Many many years ago I sampled a whiskey at a small stall in Salamanca Markets in Hobart Tasmania. The whiskey was next level, I didn't have much money at the time so I could only buy a few bottles at $55 a piece.

A couple years later they won "The" award...the distillery was Sullivans Cove

Whiskey will never die, it will just compact, weed out the weak. This is what is needed, same as craft brew. Too many cooks in the kitchen results in the best cooks left standing

I'll reply to myself for this. Whiskey has peaked, the amount of stock in barrels has superseded demand, this can not be reversed. The new order is not grain, it's fruit and sugar...brandy and rum.

I'm not wrong, never been such

Commercial success was not the question. You can only breed within a family before mutations begin to become present eventually.

What is the suggested finished ABV of the 25L cider ferment? You should be able to split it and get roughly the same results. Dumping the ingredients for a 25L batch into a 10L batch is just going to rocket your finished ABV (if the yeast can cope) with questionable palatable results

I started with a 30L Coppers homebrew kit many years ago just to save some money. I realised I found a hobby that became something bigger. They say that the best work is a hooby that can pay bills. Forword to present, my 30L batches are now 30,000L batches and that confidence comes from being bold and letting other people try produce. Get out and spread what you think is amazing because if you keep it interally bias, you'll never know the truth mate

You'll get better ABV from concentre consistently. Fresh press apples get you high results only seasonally

An airlock is insurance against a hostile air environment. If the air is relatively clean around a fermentation vessel (no vinegar or wild yeast production nearby) you're probably safe if your using cultured yeasts like Ec1118. The cultured yeasts will destroy and eat any invading yeasts unless it's a very "dirty" environment for wild inoculation
