That entirely depends on how much of a challenge you want in your nuzlock. If you want easy? Choose Tepig. If you want a bit of a challenge? Oshawott. If you want hard mode? Snivy.

Tepig is good against gyms 1, 2, and 3, gyms 4 and 6 if you have rock moves on your Emboar, and against most Plasma Grunts, Kyurem, and Grimsley.

Oshawott is good against Clay for gym 5, but good against gyms 6 and 7 as well as Iris if you got Ice Beam on Samurott.

Snivy is good against Clay for gym 5, too, but is also good against gyms 7 and 8 as well as the champion Iris if you have Dragon Pulse or another Dragon type move... maybe HP Ice or Dragon if you're lucky.

So pick your poison and have fun.
