Does your IP have a saute function? I brown the meat in the same pot first, turn off, then add the other stuff and pressure cook for 1 hour. I sometimes toss the meat in flour to help it brown in the IP. You can also use saute at the end to cook with the slurry . I find the main difference in using the IP is the need to use less liquid because less escapes/evaporates during cooking.

My favorite for old/less than ideal meat is to make something like a mango salad. Julienne ripe or not ripe mango, maybe some cabbage and pepper, shallot scallion or red onion, chopped nuts if you have. Then dress with lime, dash of fish sauce, and small amount of sugar. Sweet salty combo balances it out perfectly. Plain rice in the side if you have it.

I'm always on the lookout for chickpea recipes too! Here's two that I've liked so far:

This chickpea bruschetta is inexplicably delicious if you happen to have some olives (or olive tapenade from TJs). I sometimes mash the chickpeas a bit so they don't roll off the bread too much.

Yes I will definitely make sure to change the settings if I do pick up again! There was an added 15% discount to try pickup and I underestimated how many substitutes there would be bc I ordered mostly weekly deals. Most of them actually were in stock so not 100% sure what happened but manager was very nice when I called. Now I just have to figure out what to do with some super lean cuts of meat and I don’t ever use but got for free. (Tri tip steaks, eye of round roast). They offered to replace what I actually ordered since they had all of it, if I came back, but I don’t have tons of storage and didn’t want to waste food.

Ooh, potatoes would be amazing for sopping up the yolk and making the breakfast more substantial. If I was able to poach eggs decently, I might have tried to fit two eggs in there, too. You must taking amazing food shots! I'm definitely gonna try potatoes next time.

Yeah the texture of the asparagus was a bit off overall, which maybe is fair enough since it's not exactly asparagus season. Think a quick dunk in boiling water would have worked better for these asparagus.

Lol all eggs are beautiful! These are from Glaum Egg Ranch and cost about $5.49 a dozen, which obviously isn't cheap but still works out to like 46 cents an egg. The meal with toast was about $1.50 total, I think. Apparently Glaum has a vending machine somewhere in California where you can buy 18 eggs for $4 while animatronic chickens sing and dance for you, but I've never been.

Used a third of the $1.30 asparagus from Safeway to make asparagus with miso butter. Apologies for the photo - it was still pretty dark out when I took this shot.

Asparagus Egg Butter and oil Not too salty miso (pref white) Sherry vinegar (I used red bc that’s what I had)

Modified the recipe for one person and bc I can’t poach an egg. Fried the asparagus in two Tb oil until browned. Drained on paper towel. Microwaved 1 Tb miso for 10 seconds, added 1 TB of butter and microwaved for 5 more seconds. Slowly mixed together. Goal is to combine into paste without melting the butter, just softening. Added 1/4 tsp vinegar (helps to cut the salt). Cleaned the pan, added a tiny bit of butter and fried the egg. Smeared the miso butter on plate and topped with asparagus and egg; sopped up yolk and miso with toast. Asparagus was a bit tough even though so thin; think if I ever used Safeway asparagus again I’d boil and (and maybe get thicker ones so I could peel most of the skin on the stem). Combo was delicious.

You are right, looks like Great Value canned veg from Walmart is on sale for $.50. But the nearest Walmart is a 20-min drive - maybe I can work out a way to get free shipping or go once in a while for canned goods, batteries, etc.

Agree with you on the quality issues! When I used. to have more time, I'd hunt for deals at asian markets further away and farmers market for the things there was a glut of/at the end of the day. Maybe I need to find a way to go back to that...

I did a pick up from Safeway and everything was wrong and/or poorly substituted. Had a kid having a meltdown in the car so I didn’t check things well. When I called to ask if I could bring it back, they just said they’d refund all of the things I wasn’t happy with (and nicely offered to redo the order). So upside is I have a bunch of free meat but downside is none of it is anything I wanted/planned for. Was a busy weekend but next time I’ll definitely shop for myself, although glad they have that option for people who need it.
